"Detox" Salad - Frugal Girl Edition

Hello fellow Frugal Girls!

It's been awhile....I think it's time that I start to blog again :)

I just have a quick, yummy and delicious salad to share with you.  I had found a few recipes for a Detox Salad on Pinterest, but they didn't quite fall into my current "ShredZ" Meal Plan. What did I do? I made my own version that fit my plan!

Here it is:

2 cups red cabbage - shredded & chopped small
2 cups Brussels sprouts - shredded & chopped small
2 cups broccoli - shredded & chopped small
2 cups of kale - roughly chopped small
1/2 cup fresh parsley - roughly chopped small

Dressing:
1/2 cup lemon juice
1 tsp of ginger (or 1 tbsp of freshly grated ginger)
2 tbsp dijon mustard
2 tsp maple syrup
1/2 tsp salt
1 tbsp Chive & Onion Seasoning

Simply mix up your dressing, pour over your veggies and start mixing!  I really worked the dressing in with my hands - the more you "massage" your kale, the softer it becomes!

You could add a bit of good quality olive oil to the dressing (up to 3 tbsp).

Enjoy!

See you again soon,

Jess

Healthy Baked Apple Chips!

Hello again!

I'm always looking for ways to make healthy, simple snacks at home and I found a few recipes for making baked apple chips!

First, I took a crisp, Granny Smith Apple and made very thin slices with my Tupperware Mandolin. Then, I made sure to remove any seeds.  I didn't core the apple first - just removed the seeds.

I laid out all the slices on a non-stick cooking mat and sprinkled with my custom made Apple Pie Spice from Do You Bake?.  My kitchen smells amazing when using this yummy spice blend.

I baked them in a 200F oven for about 2.5 hours, flipping them once about half way,  then turned the oven off and left it for another hour.

Don't these look amazing?

Crunchy and a perfect fall snack with no added sugar!  Of course, if you wanted to added Sinfully Cinnamon Spice for a sweeter topping, you certainly could!

I hope you enjoy making these - I sure did!

Until next time,

Jess
